Easy Egg Tacos

Eggs are an excellent source of lean protein and are nutrient rich- containing 13 vitamins and minerals. I like cooking with eggs because they cook quickly. Start to finish, Easy Egg Tacos are ready in less than 10 minutes, which make them my go-to lunch when I am looking for something yummy and fast! Because these tacos contain ingredients from every MyPlate (add link to my tips page) food group, they are healthy as well as delicious!

Egg Tacos (serves 2)

2-3 eggs

1/2 green pepper, diced

2 tablespoons diced sweet onion

4 cherry or grape tomatoes, quartered

2 teaspoons canola oil

Salt & pepper, to taste

1/4 cup shredded sharp cheddar

Whole grain tortillas

Crack eggs into glass measuring cup. Whisk to blend. Heat oil in a small skillet. Sauté green pepper with onions and tomatoes, 3-5 minutes. Pour eggs over veggies. Cook until eggs are no longer runny, 2-3 minutes. Sprinkle with 1/4 cup shredded sharp cheddar. Serve immediately on warmed tortillas with salsa. Enjoy!
