Apple Oatmeal Muffins

Oatmeal muffins are not only delicious, but they are also filling. I am excited to share this gluten-free recipe! These yummy muffins freeze well so I often double the recipe.

Apple-Oatmeal Muffins (makes 12 muffins)

2 cups gluten-free quick cooking oats

3/4 cup brown rice flour (if you don’t need to make these gluten free, use all-purpose flour instead)

1/2 cup firmly packed brown sugar

2 teaspoons baking powder

1/2 teaspoons cinnamon

1/2 teaspoon salt

2/3 cup skim milk

1/4 cup canola oil

2 eggs

2/3 cup diced apples

1/3 cup golden raisins

Heat oven to 350°F degrees. Fill muffin tins with 12 paper liners. Combine dry ingredients in a mixing bowl. Add combined milk, oil and egg; mixing until moistened. Gently stir in apples and raisins. Fill muffin tins with batter (2/3 full). Bake 25 minutes or until golden brown. Enjoy!
