Green Apple-Cucumber Smoothie

My kids have always enjoyed smoothies. More specifically, the ones with pretty colors: pink from strawberries, orange from mangoes or peaches, and purple from blueberries. Green has not been on the preferred list…. until now!

This is a mildly sweet, green smoothie. The great advantage of finding a green smoothie you and your family enjoy is that greens eaten regularly can help improve our health. Green, leafy vegetables are high in fiber, vitamins A, C, K, and unique phytochemicals that help protect us from heart disease, diabetes and possibly even cancer. Try it! This recipe may make a green smoothie lover out of you, too!

Refreshing Green Apple- Cucumber Smoothie (makes 20 ounces)

1 cup Granny Smith apple, cored and diced (peeled, if thick skinned)

1/2 cup seedless cucumber, unpeeled and diced

1/2 to 1 cup romaine lettuce or swiss chard or kale

8 ounces lemon non-fat Greek yogurt

1 cup pineapple juice

1 cup ice cubes

Combine all ingredients in reverse order into a blender bowl. Cover and process on high until smooth and frothy. Serve immediately. Enjoy!
